The 18-year-old woman was on her way to lodge the bookie's earnings in the Post Office when she was set upon by the thug.
Dash-cam footage captured by a passing driver shows a man in a white hoodie snatching the money before fleeing the scene.
The video was released by Hertfordshire Police on Monday as they appealed for information on the theft that took place in Hatfield, Herts.
Police are also appealing for information about a second man who threatened the teenager before they made off with the shop's takings.
